During the eighties, Bill and Karyn Clark developed a salsa for personal use. Occasionally, family members would get a chance to savor their creation at family functions and holiday celebrations. Eventually, the Clarks would receive request to ship their salsa to family members. The Clarks were pleased their creation had developed into a family demand. as time progressed, the Clarks became overwhelmed by the demand and decided to discontinue making their salsa. The decision saddened the family, but they understood.
One night in the nineties while in bed with a temporary case of insomnia, Bill Clark had a revelation. He envisioned dehydrating his ingredients and creating a dry salsa mix. The main challenge would be the proper ingredient ratio. He woke Karyn at 3 AM and they went to work. They tried many different mix variations. The unacceptable batches were tossed in the back yard. Later that day the magic ingredient mix ratio was achieved with the right quantity of tomatoes. THey informed their famliy that they were back in business and as before the family members were hooked. They advised the Clarks to market their creation.
In 1996, the Clarks formed Clark’s Gringo Foods, Inc. to manufacture and market their salsa. Later, they developed a Chili Mix which was added to their line with successful results. A web site was added to obtain a national presence and orders soon came from all over the U.S. Through the next 7 to 8 years a cult following was created in West Texas for their products.
In 2005, the Clarks decided to sell their company as they were not interested in investing time and money into marketing. On January 4th, 2005, a deal was closed with Bob Poulson and Craig Sims to purchase 100% of the stock. Since then, Mr. Poulson and Mr. Sims have successfully negotiated with Albertson’sadding their products to 194 stores in Texas, Oklahoma and Louisiana. The company has been spotlighted in the January 2006 issue of Texas Highways. The editor is a customer and a great fan of the salsa. The internet sales have been increasing along with the local sales. In July 2005, the company engaged the expertise of Reese Representation to handle business development. Reese Representation has entered into negotiations with KEHE Distributors and Tree of Life who will be adding Clark’s products to Brookshire’s and HEB.
